Radish Home Fries

Radishes were in abundance on the May Oklahoma Food Coop order, and most people just slice them and put them in salads or nibble on them raw.  Weelllll. . . that's just the beginning of the possibilities. 
Why not try cooking them?

Radish Home Fries: a LOW CARB treat

1 pound radishes, washed, trimmed
1 small onion diced (or as I used this AM, one Walking Onion from my garden, the white onion at the bottom plus the scapes at the top, chopped)
2 tablespoons butter (From Wagon Creek, of course)
1 tablespoon EVOO (extra virgin olive oil)
Salt, pepper, crushed red pepper, and/or cayenne pepper, to taste and preferred heat, which in my case was a LOT, if I had had a jalapeno, it would have gone in there too!

Quarter and slice the radishes, put everything in the pan, fry 5 to 10 minutes until nicely browned on both sides. Serve in place of hash browns. Found online at one my favorite recipe sites,
